Boiled Fruit Cake

225g butter
Cup of raisins
1/2 cup soft brown sugar
2 eggs, beaten
2 cups of self raising flour

 

 

 

 

  • Place the butter, raisins and sugar in a saucepan, over a medium heat, melt the butter, bring to the boil, then leave to cool.
  • Preheat the oven to 180"c
  • Add the eggs and self raising flour, mix well.
  • Pour the mixture into an 8" round greased and lined cake tin.
  • Bake for 40 minutes or until a skewer pushed through the center comes out clean.
  • Leave to cool thoroughly before turning out of the cake tin.

This cake never lasts more than a day in our house!
