Bread and Butter Pudding with Dates

8 slices of bread, crusts removed
50g butter
30g jam (any flavour)
50g chopped dates
40g caster sugar
2 eggs
1pt fresh milk

 

 

  • Spread the bread thickly with butter and half of the bread with jam too. (4 slices)
  • Place the jammed half into a 2pt greased ovenproof dish.
  • Sprinkle with the dates and half of the sugar.
  • Top with the remaining bread, buttered sides uppermost.
  • Sprinkle with the remaining sugar.
  • Beat the eggs and milk well together.  Pour into the dish over the bread.
  • Leave to stand for 30 minutes so that the bread absorbs some of the liquid.
  • Bake at 170'c for 45 mins to 1hr until the pudding is set and the top is crisp.
