Caramel Cake

125g softened butter
125g brown sugar
125g self raising flour
2 eggs
1/2 teaspoon of mixed spices
2 tablespoons milk

Icing
50g butter
125g brown sugar
2 tablespoons milk
225g icing sugar

 

 

  • Preheat the oven to 190`c
  • Grease and line a shallow 8" cake tin
  • Cream the sugar and butter together until light and fluffy
  • Beat in the eggs
  • Fold in the flour and mixed spices
  • Spoon the mixture into the cake tin and place into the preheated oven for 25 minutes, or until a skewer placed into the center comes out clean
  • cool on a wire rack
  • For the icing, melt the butter in a saucepan, add the sugar until it dissolves.  Stir in the milk
  • Remove from the heat and beat in the icing sugar
  • Spread the icing generously over the top and sides of the cake
