Light Christmas Cake

1 1/4 cups plain flour
1 cup self raising flour
250g butter softened
Pinch salt
1 teaspoon cinnamon
4 eggs
1/2 cup sherry or brandy
325g sultanas
1/2 chopped mixed peel
1/4 cup preserved ginger
2 slices of glace pineapple chopped
6 chopped glace apricots
A handful of sliced almonds

 

 

  • Grease and line and 8" cake tin
  • Combine the sultanas, mixed peel, pineapple, apricots, and ginger, pour the sherry or brandy over, cover and set aside for half hour or overnight if you can!
  • Cream the butter and sugar  together
  • Beat in the eggs
  • Sift in the flours along with the cinnamon and salt
  • Stir the flour mixture into the fruit mixture
  • Spoon the mixture into your cake tin
  • Sprinkle the sliced almonds over the top of the cake
  • Bake slowly at 150-160`c for 3 hours or until a skewer inserted into the center comes out clean!
