10oz plain flour
1 teaspoon salt
1 teaspoon bicarb
2 teaspoons baking powder
5oz soft brown sugar
3 eggs beaten
2 ripe bananas mashed
6oz grated carrots
6 floz corn oil
2oz chopped walnuts (optional)
Frosting
3oz soft butter
3oz cream cheese
6oz icing sugar
1/2 teaspoon vanilla essence

- Preheat the oven to 180'c
- Mix all the cake ingredients together to form a batter like consistency
- Divide the mixture between two greased & lined 8" cake tins
- Place into the preheated oven and bake for 40 mins or until a skewer inserted into the center comes out clean
- Leave the cakes to cool completely
- Mix the frosting ingredients together until smooth, then, use half to sandwich the two cakes together, and top with the remainder
- Decorate with the chopped walnuts
