200g caster sugar
215g Self raising flour
85g cocoa powder
1 tsp bicarbonate of soda
60ml vegetable oil
2 eggs beaten
185g sour cream
170ml water
Easy chocolate icing (if desired)
60g butter
100g dark chocolate
1 tablespoon of cream

Preheat the oven to 190`c

Grease and line an 8" cake tin or ring tin

Place all the ingredients in a large mixing bowl, and mix well together either with a wooden spoon or a mixer

Spoon the mixture into your prepared tin and bake for 40 minutes or until a skewer inserted into the centre comes out clean

Leave to cool in the tin for 10 minutes before turning out onto a wire cooling rack to cool completely.

To make the Easy Chocolate Icing place the ingredients in a heatproof bowl and place the bowl over a saucepan of simmering water, stir until the butter and chocolate have melted and the mixture is smooth.

Cool slightly until the mixture is cool enough to drizzle over the cake.
