3 Weetabix (vitabix or weetbix)
1 cup of mixed fruit
1 cup of black tea
1/2 cup of artificial sweetener (or soft brown sugar)
2 eggs beaten
2 cups of self raising flour
3 teaspoons mixed spices

Soak the weetabix and fruit in the tea for two hours

Preheat the oven to 180`c and grease and line an 8"cake tin or a loaf tin

Sift in the flour

Add the sweetener and mixed spices, mix all the ingredients together well

Transfer the mixture to your prepared tin sprinkle with a little of the sweetener or sugar if desired and bake in the preheated oven for approximately 1 hour until a skewer pushed through the center comes out clean
This Weetabix Cake compares to the Weetbix Slice and is fantastic if you are watching the waistline but need a treat, it is healthy and low fat so do not feel guilty!
