Breakfast Muffins

Makes nine

180g self raising flour
80 mature cheddar
Pinch of salt &pepper
60ml olive oil
60ml milk
10 eggs
80g ham chopped into pieces

Preheat the oven to 180’c

 

 

  • Grease your muffin tin or line with 9 muffin cases.
  • Place the flour, cheese, ham. salt & pepper into a bowl.
  • In a jug measure the milk & oil, add 1 of the eggs and whisk together.
  • Pour the mixture into your bowl, mix all ingredients together well.
  • Spoon enough mixture in each muffin case to cover the bottom then set aside.
  • Carefully crack an egg into each case
  • Top with the remaining mixture.
  • Bake for 25 minutes.
  • Leave to cool slightly before carefully removing from the tray & serve warm.
