Makes nine
180g self raising flour
80 mature cheddar
Pinch of salt &pepper
60ml olive oil
60ml milk
10 eggs
80g ham chopped into pieces
Preheat the oven to 180’c

Grease your muffin tin or line with 9 muffin cases.

Place the flour, cheese, ham. salt & pepper into a bowl.

In a jug measure the milk & oil, add 1 of the eggs and whisk together.

Pour the mixture into your bowl, mix all ingredients together well.

Spoon enough mixture in each muffin case to cover the bottom then set aside.

Carefully crack an egg into each case

Top with the remaining mixture.

Bake for 25 minutes.

Leave to cool slightly before carefully removing from the tray & serve warm.
