1 1/2 cups of plain flour
1 1/2 cups of self raising flour
Pinch salt
Pinch of ground chillies
60g butter
1 1/2 cups of grated mature cheese
1/2 cup of finely chopped pecans
2 tablespoons of beer or water

Grease and line a couple of baking trays

Sift the flours and salt into a mixing bowl

Add the ground chillies

Rub in the butter with fingertips until the mixture resembles breadcrumbs

Stir in the cheese and pecans

Add the beer or water and mix into a dough

Chill for 30 minutes

Roll out thinly onto a lightly floured surface

Cut into small rounds or squares

Arrange onto the baking trays and bake at 180`c until lightly golden and crisp

Cool on a wire rack then store in an airtight container
