cheese and Pecan Nibbles

1 1/2 cups of plain flour
1 1/2 cups of self raising flour
Pinch salt
Pinch of ground chillies
60g butter
1 1/2 cups of grated mature cheese
1/2 cup of finely chopped pecans
2 tablespoons of beer or water

 

 

  • Grease and line a couple of baking trays
  • Sift the flours and salt into a mixing bowl
  • Add the ground chillies
  • Rub in the butter with fingertips until the mixture resembles breadcrumbs
  • Stir in the cheese and pecans
  • Add the beer or water and mix into a dough
  • Chill for 30 minutes
  • Roll out thinly onto a lightly floured surface
  • Cut into small rounds or squares
  • Arrange onto the baking trays and bake at 180`c until lightly golden and crisp
  • Cool on a wire rack then store in an airtight container

This cheese and pecan nibbles recipe is a good one to add to your Christmas nibbles!
