Makes 4
35g butter
35g plain flour
4 eggs separated
1/4 pint milk
50g grated cheese
1/2 onion or 4 spring onions chopped
Salt and pepper

preheat the oven to 180`c and grease 4 ramekin dishes

Melt the butter over a low heat

Add the flour to the pan mixing well

Add the milk, mixing to form a thick batter consistency, add a little more milk if required

Remove the pan from the heat

Beat the egg yolks then gradually add to the batter mix well

Combine the cheese and onion

Add a sprinkling of salt and pepper

Beat the egg whites until they form peaks, then fold into your mixture

Pour the mixture into the ramekin dishes

Bake for 40-45 minutes until browned and well risen
Cheese soufflés can be hit and miss, but with this Easy Cheese Soufflé recipe provided by Marianne you just can’t go wrong. My boys and I really enjoyed this, along with some coleslaw, salad and crusty bread!
