Serves 3-4
150g pack of cous cous
100g pitted black olives
220g cherry tomatoes halved
1 medium red onion finely sliced
1/2 zucchini/cucumber cut into cubes
2 tablespoons of fresh parsley chopped
3 tablespoons of fresh mint, chopped
salt and pepper to season

Make up the cous cous according to the packet instructions and leave to cool

Combine the cous cous with the zucchini/cucumber, onion, tomatoes, herbs and the oil marinade from the feta cheese pack

Add the cheese and olives

Season with the salt and pepper then mix together
