Savoury Fritters

Makes Approx 12
1 egg
1/2 cup of self raising flour
125 ml low fat milk
40g diced bacon
1 cup creamed sweetcorn
1 small onion diced
1 large tomato, skinned, de-seeded and diced
1 tablespoon of curry powder
1 handful of chopped chives
Salt and ground black pepper to taste

 

 

  • Combine the eggs, flour and milk
  • Add the remaining ingredients and stir through
  • In a lightly oiled non stick pan, over a medium heat add spoonfuls of the mixture.  Cook until the mixture bubbles then turn the fritter over to cook the other side

Fritters are good served hot or cold, with some salad and dip of your choice, salsa being a popular choice. 
A tip to skin a tomato easily is to submerge it into boiling water for 30 seconds.  Remove carefuly so not to burn yourself.  Pierce the skin with a knife and you should now be able to peel back the skin!
