Serves 4
1 onion chopped
100g mushrooms sliced
1 green capsicum/pepper cored, seeded & chopped
Handful of fresh chives chopped
150g long grain rice
150g slicing sausage (or tuna)
3 tablespoons of mayonnaise (whole egg)
2 tablespoons of lemon juice
1/2 teaspoon of paprika
2 tablespoons of olive oil
Salt & pepper

- Cook the rice according to the packet instructions, drain & set aside
- Heat the oil in a pan, add the onion and gently fry for 5 minutes
- In a salad bowl combine the rice, onion, sausage, capsicum, mushrooms, and onion
- Mix together the mayonnaise (whole egg) lemon juice, paprika and a sprinkle of salt and pepper, then mix this with the rice salad until all the ingredients are thoroughly coated, then season with salt and pepper
- Sprinkle with the chopped chives
Spicy rice & rice salads are ideal to accompany a meal or barbecue and also make good lunchboxes. An alternative to the sausage can be left over cooked meat, or fish.
