Spinach Omelette With Walnuts

Serves 4
1 large leek
150g spinach
4 spring onions
6 eggs
3 tablespoons of chopped mixed herbs
3 tablespoons of chopped fresh parsley
3 tablespoons of chopped walnuts
3 tablespoons of raisins
Salt and ground black pepper
2 tablespoons of softened butter

 

 

  • Preheat the oven to 160`c
  • Grease and ovenproof dish with the butter
  • Wash the vegetables
  • Beat the eggs and season
  • Add all the other ingredients to the eggs and mix well
  • Pour the mixture into the dish and cover with foil
  • Bake in the oven for 30 minutes, then remove the foil and bake for a further 15 minutes until set with a golden crust on top.

This spinach omelette is delicious served hot or cold.  Try Spinach and feta omelette also by switching the walnuts and raisins for cubes of feta!
