Thai Salad

Serves 4

1 English cucumber peeled and sliced into bite sized chunks
1/2 red onion, sliced
3 spring onions finely sliced
1 red capsicum chopped
1 red chilli de seeded and finely sliced
1/2 cup dry roasted peanuts chopped
1/2 cup of fresh coriander
1 cup of cooked baby shrimp (if using as a main salad)

Dressing
2 tablespoons of fish sauce
1 tablespoon soy sauce
Juice of half a lime
2 garlic cloves crushed
1/4 to 1/2 teaspoon cayenne pepper
1 teaspoon sugar

 

 

 

 

  • Place in a salad bowl,  the cucumber, red onion, spring onions, capsicum, chilli, 1/4 of the cup of coriander, and the prawns
  • Mix the dressing together then taste test.  If the dressing is too sour add a little more sugar
  • Pour the dressing over the salad and toss well
  • Top with the ground peanuts and the rest of the coriander
