350 mls cold tea
175g Raisins
175g Sultanas
275g Self raising flour
200g Soft bown sugar
1 Egg

Place the fruit in a bowl with the sugar, pour over the tea and leave to soak overnight.

The next morning, Peheat the oven to 150'c.

Add the flour and egg to your tea & fruit mixture, mix well.

Place the mixture in a greased and lined 500g loaf tin.

Cook for around 1hr and 30 minutes or until a skewer pushed into the middle of the cake comes out clean.

Leave to cool in the tin before turning out onto a wire cooling rack.
