1 cup plain flour
1/2 cup brown sugar
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon mixed spice
1 teaspoon cinnamon
1/2 cup vegetable oil
2 eggs
1/2 cup chopped pecans
1 cup of cooked, drained and mashed pumpkin

Grease & line a microwavable loaf dish

Blend all of the above ingredients in a mixing bowl on low speed for 20 seconds, then on high speed for 1 minute

Spread the mixture into the loaf dish

Cook on medium for 9 minutes

Cook on high for 4 - 5.30 minutes, after the 4 minutes check if the top still looks too moist try 30 seconds at a time as microwave ovens can vary, mine needed the 5.30 minutes

Let stand for 5 minutes before turning out onto a wire rack.
Alternatively this Pumpkin, Pecan bread can be cooked in the oven, 180`c for 40 minutes, or until a skewer placed in the center comes out clean!
I have received a few requests for some microwave meals and cakes. This Pumpkin Bread is perfect when you’re pushed for time and fancy a sweat treat!
