Serves 4
3 tablespoons of olive oil
500g beef steaks cut into thin strips
1 tablespoon of chopped garlic
1 tablespoon of chopped root ginger
2 teaspoons garam masala
200g cherry tomatoes halved
100g mushrooms quartered
100g baby leaf spinach

Heat the oil in a wok or frying pan, add the meat and toss for 4-5 minutes until sealed and turning brown

Add the garlic, ginger, and garam masala and cook for a further 2 minutes

Add the tomatoes and mushrooms and cook for 5 minutes, tossing well

Add the spinach and cook for a further 2 minutes, tossing well to combine all the ingredients

Serve with boiled rice and naan breads
