Serves 4
8 tortillas
100g cheddar cheese (I use the light option)
1 onion sliced
6 gherkins from a jar sliced
4 tablespoons of Olive oil or use fry light

- Heat a tablespoon of olive oil in a pan
- Place one tortilla in the pan sprinkle 25g of cheese leaving a little gap around the edges so it doesn’t spill out, then add some slices of onion and gherkin
- Lay another tortilla precisely over the top and press down firmly with a spatula to seal
- Leave to warm through for a couple of minutes then flip the quesadilla over and leave it to cook on the other side for a minute or two
- When cooked transfer to a plate and cut into halves or quarters
- Repeat with the remaining tortillas
- Serve immediately while hot
Quesadillas Recipes are great for a quick, easy snack, the fillings can be varied to suit your taste, and they are great to play around with. Serve with some side salad.
