Cheese Quesadilla with Onion & Gherkin

Serves 4
8 tortillas
100g cheddar cheese (I use the light option)
1 onion sliced
6 gherkins from a jar sliced
4 tablespoons of Olive oil or use fry light

 

 

  • Heat a tablespoon of olive oil in a pan
  • Place one tortilla in the pan sprinkle 25g of cheese leaving a little gap around the edges so it doesn’t spill out, then add some slices of onion and gherkin
  • Lay another tortilla precisely over the top and press down firmly with a spatula to seal
  • Leave to warm through for a couple of minutes then flip the quesadilla over and leave it to cook on the other side for a minute or two
  • When cooked transfer to a plate and cut into halves or quarters
  • Repeat with the remaining tortillas
  • Serve immediately while hot

Quesadillas Recipes are great for a quick, easy snack, the fillings can be varied to suit your taste, and they are great to play around with.  Serve with some side salad.
