Serves 4
340g potatoes
300g broccoli florets
140g zucchini/courgette cubed
1 onion sliced
3 garlic cloves crushed
200g cherry tomatoes halved
115g cheddar cheese light grated
3 tablespoons Olive oil light
190g frozen peas
3 large eggs
198g quark (Can be found in the dairy section of supermarket. IGA in Australia)
1 teaspoon chilli flakes
Salt and pepper

Peel and cut the potatoes into cubes. Place them in a pan of boiling water and simmer until tender. Drain and set aside to cool

Preheat the oven to 200`c while the potatoes are simmering

Using a large heavy based frying pan, add your oil. Fry your onion over a medium heat for 3-4 minutes

add the broccoli, zucchini, tomatoes and peas, fry for a further 2 minutes

Mix with the potatoes and then transfer to an ovenproof dish

Whisk the eggs, quark, chilli flakes and garlic together until smooth and season well with the salt and pepper

Pour the mixture into the ovenproof dish evenly distributing over the vegetables

Sprinkle the cheese over the top and bake for 40 minutes when the cheese should be golden brown.
This Cheesy Bake is a great all round family meal & even kind to the waistline if you use the light cheese!
