Cheesy Bake

Serves 4
340g potatoes
300g broccoli florets
140g zucchini/courgette cubed
1 onion sliced
3 garlic cloves crushed
200g cherry tomatoes halved
115g cheddar cheese light grated
3 tablespoons Olive oil light
190g frozen peas
3 large eggs
198g quark (Can be found in the dairy section of supermarket.  IGA in Australia)
1 teaspoon chilli flakes
Salt and pepper

 

 

  • Peel and cut the potatoes into cubes.  Place them in a pan of boiling water and simmer until tender.  Drain and set aside to cool
  • Preheat the oven to 200`c while the potatoes are simmering
  • Using a large heavy based frying pan, add your oil.  Fry your onion over a medium heat for 3-4 minutes
  • add the broccoli, zucchini,  tomatoes and peas, fry for a further 2 minutes
  • Mix with the potatoes and then transfer to an ovenproof dish
  • Whisk the eggs, quark, chilli flakes and garlic together until smooth and season well with the salt and pepper
  • Pour the mixture into the ovenproof dish evenly distributing over the vegetables
  • Sprinkle the cheese over the top and bake for 40 minutes when the cheese should be golden brown.

 

This Cheesy Bake is a great all round family meal & even kind to the waistline if you use the light cheese!
