Chicken and Mushroom Carbonara

Serves 3 to 4

2 chicken breasts cubed
1 cup of mushrooms sliced
1 egg beaten
2 tablespoons of olive oil
600ml of cream
Spaghetti pasta 100g per serve
Salt and pepper to season

 

 

  • Cook the pasta according to the packet instructions
  • Heat the oil in a pan. add the chicken and cook all sides for about 3-4 minutes until golden then reduce the heat for 15 minutes turning the chicken occasionally
  • Add the mushrooms and continue on the low heat for a further 10 minutes or until the chicken is cooked through
  • Add the cream and the beaten egg bring to a gentle simmer
  • Season with the salt and pepper and stir until the sauce has thickened (if you like your sauce thicker mix two tablespoons of flour with a little water to form a paste, then stir this into your sauce)
  • Pour over the cooked pasta

This Easy Carbonara Recipe is a great family meal, and again, the ingredients can be changed, ham and bacon being a popular choice with mushrooms.
