Cottage Pie

Serves 4
450g minced lamb or beef
1 medium onion, chopped
2tbsp plain flour
300ml (1/2pt) lamb or beef stock
1 tbsp tomato puree
1/2 tsp dried mixed herbs
1 garlic clove crushed
salt and freshly ground pepper
700g potatoes, chopped
25g butter
3 tbsp fresh milk

 

  • Dry fry the mince in a non stick pan until browned.
  • Add the onion and cook for 5 minutes, stirring occasionally.
  • Add the flour, stirring for 1 minute
  • Gradually blend in the stock. tomato puree, garlic, herbs and season to taste.      
  • Cook, stirring until the mixture thickens and boils, then cover and simmer for 25 minutes
  • Pour the mixture into a 2 pint, ovenproof dish
  • Meanwhile, cook the potatoes in boiling water (salted if desired), for 20 minutes until tender.
  • Drain well, mash with the butter and milk
  • Cover the mince with the potato.
  • Bake in the oven 180'c for 25 minutes, until the potato browns.
