Easy Chilli Con Carne

Serves 4
500g beef mince
420g can kidney beans
400g can diced tomatoes
35g packet of taco seasoning mix
1 tsp chilli powder
125 ml water
2 fresh long chillies
1 onion, chopped
A handful of chopped fresh coriander
2 tsp garlic powder (optional)

 

 

  • Oil and heat a large frying pan, add the mince & chopped onion stirring until browned.
  • Add the chillies, seasoning mix, and garlic, stir for a further 5 minutes.
  • Add the tomatoes, undrained and the water to the pan bring to the boil, then reduce heat, simmer for 15 minutes.
  • Add the beans and simmer for a further 5 minutes
  • Remove from the heat and stir in the coriander.

 

Vegetarians can enjoy this dish using quorn instead of beef mince. Serve with rice or couscous.  Also very nice with a little sour cream!!
