Lamb and Orange

Serves 4
300g diced lamb
1 onion chopped
2 soft tomatoes
50g butter
Grated rind and juice of one large orange
Salt and pepper to taste

 

 

 

 

  • Pour boiling water over the tomatoes, remove the skins, then chop them
  • Melt the butter in a heavy based pan, add the lamb and onions, cook over a high heat to seal the meat
  • Add the orange juice, rind and tomatoes and season with salt and pepper
  • Cover the pan and simmer over a low heat for 40-45 minutes or until the meat is tender
