Serves 4
511g extra lean mince pork, beef, or vegetarians can use quorn
4 garlic cloves peeled and crushed
1 tsp ground cumin
1 tsp ground cinnamon
1 onion finely chopped
1 carrot finely chopped
2 celery sticks chopped
700g jar passata
1 tsp sweetener
2 tablespoons olives oil
Handful of fresh parsley

Place the mince, garlic, cinnamon and cumin in a bowl and combine, then shape into small balls

Using a large heavy based pan, add your oil, then cook half of your meatballs 2-3 minutes on each side, drain on kitchen paper then repeat with the other half

Now fry the onion, carrot and celery for 5 minutes

Stir in the passata and sweetener, bring to the boil then reduce the heat to a simmer, add the meatballs and cover for 25 - 30 minutes stirring occasionally

Place the meatballs into bowls, cover with the tomato sauce and sprinkle with fresh parsley
