Serves 4
1 tablespoon of olive oil
1 finely chopped onion
2 garlic cloves finely chopped
1 tsp cayenne pepper
2 x 400g cans mixed beans
400g can of plum tomatoes
300ml vegetable stock
16 pitted black olives

Heat the oil in a pan over a low heat

Add the onion and a pinch of salt, fry gently for about 5 minutes

Add the garlic and cayenne pepper and stir through

Pour in the tomatoes and mixed beans including the juices, pour over the stock. Bring this to the boil then reduce the heat and simmer for 15 to 20 minutes

Add the olives and simmer for a further 5 minutes topping with a little water if required. Sprinkle with a little bit of coriander to serve.
This is a lovely warming Vegetarian Stew recipe. I serve mine over a bed of spinach for its iron and calcium content, then a layer of rice makes this a great filling meal that is good for the waistline and the purse!
