Mixed Bean Stew

Serves 4
1 tablespoon of olive oil
1 finely chopped onion
2 garlic cloves finely chopped
1 tsp cayenne pepper
2 x 400g cans mixed beans
400g can of plum tomatoes
300ml vegetable stock
16 pitted black olives
Salt

 

 

 

 

  • Heat the oil in a pan over a low heat
  • Add the onion and a pinch of salt, fry gently for about 5 minutes
  • Add the garlic and cayenne pepper and stir through
  • Pour in the tomatoes and mixed beans including the juices, pour over the stock.  Bring this to the boil then reduce the heat and simmer for 15 to 20 minutes
  • Add the olives and simmer for a further 5 minutes topping with a little water if required.  Sprinkle with a little bit of coriander to serve.

This is a lovely warming Vegetarian Stew recipe.  I serve mine over a bed of spinach for its iron and calcium content, then a layer of rice makes this a great filling meal that is good for the waistline and the purse!
