Pork and Cider Stew

Serves 4

50ml oil
10 floz chicken stock
300ml dry cider
675g diced pork
3 tablespoons of flour
1 teaspoon dried sage
2 desert apples peeled and sliced
Salt and pepper to taste
Parsley to garnish if desired

 

 

  • Heat the oil in a medium sized heavy based saucepan, add the onion and pork, fry for 5 minutes or until the pork is browned
  • Sprinkle the flour over the pork, stir to form a smooth paste
  • Gradually add the stock and cider, bring this to the boil, stirring constantly then turn down to a simmer
  • Stir in the sage, then add salt and pepper to taste
  • Cover & simmer for 2 hours or until the meat is cooked through
  • 30 minutes before the end of the cooking time add the apples
