Serves 4
50ml oil
10 floz chicken stock
300ml dry cider
675g diced pork
3 tablespoons of flour
1 teaspoon dried sage
2 desert apples peeled and sliced
Salt and pepper to taste
Parsley to garnish if desired

Heat the oil in a medium sized heavy based saucepan, add the onion and pork, fry for 5 minutes or until the pork is browned

Sprinkle the flour over the pork, stir to form a smooth paste

Gradually add the stock and cider, bring this to the boil, stirring constantly then turn down to a simmer

Stir in the sage, then add salt and pepper to taste

Cover & simmer for 2 hours or until the meat is cooked through

30 minutes before the end of the cooking time add the apples
