So Simple Mushroom Stroganoff

Serves 4

500g mushrooms, sliced
1 medium onion sliced
2 garlic cloves crushed
1 red capsicum (pepper)
30ml olive oil
100ml red wine
2 tablespoons of double cream
1 tablespoon of balsamic vinegar
1 desert spoon of corn flour
1 tsp paprika
1 handful of coriander

 

 

  • Gently fry the onion and garlic or 3-4 minutes
  • Add the mushrooms and capsicum, fry until softened and mushrooms browned
  • Add the wine and vinegar, simmer gently for 10 minutes
  • Combine the flour with some water to form a paste, then add to the pan and mix well.
  • Add the coriander & cream

Serve with rice or cous cous, delicious!  This is such a quick simple meal to make, and suitable for vegetarians.  Meat lovers can add some chopped cooked meat of their choice when adding the wine and vinegar!
