Tuna and White Bean Loaf

Serves 4
1 x 425g tuna in springwater drained and flaked
420g can of white beans drained and rinsed
5 spring onions chopped
150g rolled oats
2 egg whites
1 large carrot grated
230g chopped mushrooms
1 tablespoon of chopped fresh dill
1 1/2 tablespoons of mustard of your choice. I like the wholegrain one!
1 tablespoon of currants
Sprinkle of salt and pepper

 

 

 

 

  • Preheat the oven to 190`c
  • Grease and line a large loaf tin
  • Combine all the ingredients and place into the loaf tin
  • Bake for 45 minutes then leave to stand for 5 minutes before slicing and serving.
