Winter Warming Minced Chicken

Serves 4
8oz minced chicken
2 celery sticks sliced thinly
2 carrots sliced
1 small red capsicum sliced
2 tsp minced garlic
1 pint chicken stock
1 tablespoon of flour
1 tsp oregano
salt and pepper to taste

   

 

  • Fry the minced chicken for 10 minutes or until browned
  • Add the celery, carrots, capsicum and garlic to the pan, fry for another 5 minutes.
  • Add the flour, mixing well
  • Pour the stock in the pan, bring to the boil, then turn down to a simmer,
  • Add salt and pepper to desired taste
  • Simmer for a further 30 minutes
  • Serve with spaghetti
