Butterscotch Oat Slices

Makes 8

1/4 cup butter or margerine
2/3 cup brown muscavado sugar
1 teaspoon vanilla essence
1 cup quick cooking rolled oats
1/4 cup plain flour
1/4 cup chopped walnuts
1 teaspoon baking powder
1/4 teaspoon salt

 

 

 

 

  • Preheat the oven to 160`c
  • Grease an 8" round or square cake tin
  • Melt the butter in a pan over a medium heat
  • Stir in the brown sugar and vanilla
  • Remove from the heat
  • Stir in the rolled oats and nuts
  • Sift in the flour, baking powder and salt, mix well
  • Turn into your prepared tin, press down evenly
  • Bake for 20-25 minutes until set and golden
  • Leave to cool for 10 minutes before cutting into slices, then cool completely!
