Makes 8
1/4 cup butter or margerine
2/3 cup brown muscavado sugar
1 teaspoon vanilla essence
1 cup quick cooking rolled oats
1/4 cup plain flour
1/4 cup chopped walnuts
1 teaspoon baking powder
1/4 teaspoon salt

- Preheat the oven to 160`c
- Grease an 8" round or square cake tin
- Melt the butter in a pan over a medium heat
- Stir in the brown sugar and vanilla
- Remove from the heat
- Stir in the rolled oats and nuts
- Sift in the flour, baking powder and salt, mix well
- Turn into your prepared tin, press down evenly
- Bake for 20-25 minutes until set and golden
- Leave to cool for 10 minutes before cutting into slices, then cool completely!
