Chocolate Chip Shortbread

makes 15

230g plain flour
110g cornflour
100g caster sugar
230g diced butter, plus a little extra for greasing
80g chocolate chips (I used dark)

 

 

 

 

  • Preheat the oven to 160`c
  • Grease and line a 9 inch baking tin
  • Sift the flour and cornflour into a large bowl,stir in the sugar
  • Add the butter and rub together until the mixture starts to bind together
  • Turn the mixture into your prepared tin, press evenly over the top. Prick the surface with a fork,
  • Sprinkle the chocolate chips over the top and lightly press them in
  • Bake in the preheated oven for 35-40 minutes or until cooked but not browned
  • Mark the portions with a sharp knife then leave to cool for about 15 minutes when you can carefuly remove and place on a cooling rack to cool completely.
