Coconut Macaroons

Makes 16-18

1 egg separated

1 egg yolk

55g caster sugar

120g desiccated coconut

 

 

  • Preheat the oven to 150`c or 130`c if fan forced
  • Grease and line an oven tray
  • Beat the 2 egg yolks and sugar in a bowl until creamy then stir in the coconut
  • Beat the 1 egg white until it forms peaks then gently stir it into the coconut mixture
  • Drop heaped teaspoons of the mixture onto the prepared trays
  • Bake uncovered for 15 minutes
  • Reduce the oven temperature to 120`c or 100`c if fan forced and bake for a further 30 minutes or until the macaroons are a golden brown
  • Leave to cool on the tray


My son loves Macaroons and enjoys following this easy coconut macaroons recipe.  You can add some chocolate to them making them Chocolate Coconut Macaroons by melting a small amount of chocolate in a bowl placed over a pan of boiling water.  Dip the base of the macaroons into the chocolate, then place on a wire rack to set.
