Cowgirl Cookies

Makes about 30 cookies

1 1/2 cups of plain flour
1 teaspoon baking powder
1/4 teaspoon salt
250g/1 block, unsalted butter, softened
1/2 cup brown sugar
1/2 cup caster sugar
2 1/2 cups rolled oats
1 cup chocolate chips
1 1/2 cups of rice bubbles/crispies
1 cup raisins
2 eggs
1 teaspoon vanilla essence

 

 

  • Preheat the oven to 180`c
  • Grease and line a couple of baking trays
  • In a large bowl, cream together the butter and sugars
  • Add the eggs, one at a time beating well after each addition
  • beat in the vanilla
  • Sift in the flour, baking powder and salt, mix until combined
  • Stir in the oats, chocolate chips, rice bubbles and raisins
  • Drop tablespoons of the mixture on to the baking sheets and bake in your pre-heated oven for 16-18 minutes or until light golden
  • Leave to cool completely on wire racks!
