Crunchy Peanut Cookies

Makes 20

1 egg beaten
100g unsalted butter
100g soft light brown sugar
100g crunchy peanut butter
150g self raising flour
1/2 tsp baking powder
50g puffed rice cereal

 

 

 

 

  • Preheat the oven to 190`c
  • Grease and line a large baking tray
  • Cream together the butter and sugar
  • Add the egg little by little, beating after each addition
  • Add the peanut butter and mix well
  • Sift in the flour and baking powder, mix all together
  • Pour the puffed rice into a separate bowl
  • Scoop teaspoons of the mixture, shape into a ball and roll each one through the puffed rice, then flatten it slightly and place onto the baking tray
  • Bake in the preheated oven for 20 minutes
  • Leave in the tray for 5 minutes before transfering with a spatula to a wire cooling rack to cool completely.
