Makes 20
1 egg beaten
100g unsalted butter
100g soft light brown sugar
100g crunchy peanut butter
150g self raising flour
1/2 tsp baking powder
50g puffed rice cereal

Preheat the oven to 190`c

Grease and line a large baking tray

Cream together the butter and sugar

Add the egg little by little, beating after each addition

Add the peanut butter and mix well

Sift in the flour and baking powder, mix all together

Pour the puffed rice into a separate bowl

Scoop teaspoons of the mixture, shape into a ball and roll each one through the puffed rice, then flatten it slightly and place onto the baking tray

Bake in the preheated oven for 20 minutes

Leave in the tray for 5 minutes before transfering with a spatula to a wire cooling rack to cool completely.
