Domino Biscuits

Makes about 20

225g self raising flour
115g softened butter
60g caster sugar
Finely grated lemon rind
1 egg, beaten
110g dark chocolate drops

 

 

 

 

  • Preheat the oven to 180`c
  • Sift the flour into a mixing bowl and rub in the butter until the mixture resembles breadcrumbs
  • Stir in the sugar and lemon rind
  • Mix to form a dough with the egg
  • Turn onto a floured work surface and knead until smooth
  • Roll the dough out into a rectangle about 1/4 inch thick
  • Cut into bars about 7x3cm, then transfer to a greased baking tray
  • Mark each bar in half with a knife and arrange the chocolate drops on each side to resemble domino dots
  • Bake for 12-15 minutes
  • Leave to cool for 5 minutes in the tray before transferring to a cooling rack to cool completely.
