Lemon Poppyseed Muffins

Makes 12
1 3/4 cups self raising flour
1 tablespoon of baking powder
1/2 cup sugar or sweetener
1 tablespoon of poppy seeds or other seeds of your choice
1 tablespoon grated lemon rind
1/4 cup of apple sauce or puree
1 cup skimmed milk
2 egg whites
1 tablespoon of lemon juice
12 muffin cases

 

 

  • Preheat the oven to 190`c
  • Sift the flour and baking powder together in a bowl
  • Add the sugar and seeds
  • Combine the remaining ingredients and add to the bowl, mix with a wooden spoon until just combine, do not over mix
  • Spoon the mixture into a 12 cup muffin tin
  • bake for 15-20 minutes
