250g butter softened
1/2 cup sugar
2 1/2 cups plain four
2 tablespoons butter
3/4 tin condensed milk (I use light)
2 tablespoons golden syrup
1 cup dark chocolate melts (or milk chocolate if you prefer)
1/2 cup white chocolate melts

Preheat the oven to 160`c

Grease and line a baking dish 8" x 12" or similar

Cream the 250g of butter and sugar together until light and creamy

Add the flour and combine well

Press the shortbread into your lined dish then prick with a fork

Bake in the preheated oven for 20-25 minutes until firm and just golden, then set aside to cool slightly

In a small pan, add the condensed milk, golden syrup and the 2 tablespoons of butter, mix over a gentle heat until the butter has melted, and bring the mixture to a simmer taking care not to burn!

Spread the caramel mix over the shortbread base then return to the oven for a further 5 minutes

Remove from the oven and cover with the dark chocolate melts then set aside for just a few minutes before gently spreading with a knife

Melt the white chocolate melts in a microwave on reduced heat or in a bowl over a pan of boiling water

Drizzle the white chocolate over the dark chocolate

When set cut into squares and enjoy!
This recipe for Millionaires shortbread is, very, very naughty but very, very nice!! Mine is my Melbourne Cup treat!
