Makes 12-15
140g plain flour
100g demerara sugar
140g plain chocolate
225g unsalted butter
1/2 tsp bicarbonate of soda
1/2 tsp baking powder
1/2 tsp almond extract
1 egg
1 tablespoon milk
55 g mixed chopped nuts

Preheat the oven to 180`c

Grease and line a baking tray

Place the chocolate in a bowl placed over a saucepan of simmering water and heat until melted

Sift together the flour, bicarbonate of soda, and baking powder into a bowl

In a separate bowl cream together the butter and sugar, then add the almond extract and egg, mix well.

Remove the chocolate from the heat and add to the butter mixture, and mix

Add the nuts, flour mixture and milk, mixing until well combined.

Spoon the mixture into the prepared tray, smooth over the top and place in the preheated oven for 30 minutes or until firm to touch. The mixture will still be a little soft in the center.

Remove from the oven and leave to cool completely.

Cut into squares and remove from the tray.
