Sultana Slices

Makes approx 12
1 1/4 cups plain flour
2 teaspoons of mixed spices
1/2 cup sultanas
1/2 cup brown sugar
1 1/2 cups of rolled oats
125g margarine
2 tablespoons of honey
1/2 tablespoon bicarbonate of soda
2 tablespoons boiling water

 

 

 

 

  • Preheat the oven to 180`c
  • Grease and line a medium size baking tin
  • Over a low heat, melt the margarine and honey
  • In a small jug, add the boiling water to the bicarb, then pour into the pan with the margarine, mix well then remove from the heat
  • Add all the other ingredients and combine
  • Turn the mixture into the baking tin spreading it evenly
  • Bake for 35-40 minutes or until the top is browned and a skewer inserted into the center comes out clean

My son recently made these Sultana Slices at school and he enjoyed them so much he asked me to share the recipe with you.  Ideal for a snack and perfect for a lunch box!
