Makes12-14
220g self raising flour
100g margarine
75g caster sugar
100g currants or sultanas if you prefer
1/2 teaspoon mixed spices
1 egg
1 tablespoon milk

· Place the margarine in a mixing bowl
· Sift in the flour and rub together until it resemble breadcrumbs
· Add the sugar, currants and mixed spice
· Beat the egg and milk together and add to the flour then mix to form a stiff dough
· Roll out onto a lightly floured surface and cut into 3 inch rounds
· Heat a heavy based pan, cook the cakes in small batches on a low-medium heat for 3 minutes each side or until golden brown
· Cool on a wire rack and serve with a dusting of icing sugar
These very traditional Welsh Cakes are best eaten the day they are made, which never seems to be a problem in our house. If you have a griddle, that would be the ideal way to cook them. Then serve with butter and jam or just as they are.
