Malai Chicken

Serves 4
2 tablespoons oil
700g chicken breast, skinless and boneless cut into bite size pieces
2 teaspoons mild curry powder
1 teaspoon of crushed cardamom seeds
1 teaspoon turmeric
1 teaspoon mild chilli powder
1 tablespoon tomato puree
150ml chicken stock
150g low fat natural yogurt
Salt and pepper to taste

 


Heat the oil in a saucepan over a medium heat
Add the cardamom and curry powder fry for 10 seconds
Add the chicken and fry over a high heat for 5 minutes
Add the turmeric and the chilli powder then season well
Mix the tomato puree, yogurt and stock together then pour into the pan with the chicken
Only bring to a simmer DO NOT BOIL, if you boil the mixture will curdle
Cover and gently cook for 15 minutes
Serve over a bed of rice and drizzled with a little more yogurt

I am a great curry fan.  This Malai Chicken is a lovely mild curry for those of you who don’t like hot curry!  By using low fat yogurt instead of cream this is also a low fat meal!
